Jamaican Curried Chicken (for about 4 people)


INGREDIENTS:
  • 5 chicken breasts (skinned)
  • Enough oil to cover the bottom of your pot
  • Onions
  • Sweet peppers
  • Garlic
  • Black pepper
  • Thyme
  • Jamaican Curry Powder (spicy! – Fiesta is the best place to get this)
  • Coconut milk 
  • 1 Large Potato (optional) to thicken gravy
 
PREPARE
  • Cut up your chicken breasts with the bone
  • Season with dry ingredients to desired taste
  • Include enough curry powder to more than cover the chicken.
  • Cut up a potato into small pieces. You can leave the skin if you wish.
 
COOK
Heat your oil
Add seasoned chicken and start stirring as soon as it starts to cook.
Once the chicken has been partially cooked, add your onions, sweet peppers and garlic. Add just enough water to the chicken to almost cover it. If you want to add coconut milk with the water, put half and half coconut milk and water.
Add more curry if you think necessary. Add your large potato to thicken the gravy. Turn town your stove, cover your pot and simmer until cooked.
 
You can make dumplings by boiling them separately in boiling water and a little oil. Add them to your chicken once the water/coconut liquid has been added to the chicken.
 
Make your white rice with butter.
